Georgia's iconic canoe-shaped flatbread, lightly leavened and slapped onto the inner walls of a tone — a deep clay-and-stone bread oven — where it bakes into a crisp, blistered shell around a soft, pillowy crumb. Pulled out hot with a long iron hook, it's torn (never cut) at the table and used to scoop, dip, and wrap everything else on the supra.
