Kebab

A spiced log of minced meat — usually beef or lamb, sometimes mixed — kneaded with onion, fresh coriander, and a Caucasian battery of paprika, cumin, and black pepper, then shaped onto a flat skewer and grilled over open flame until the surface chars and the inside stays pink-juicy. Served wrapped in lavash with tkemali and raw onion, or alongside grilled peppers and tomato, the kebab is the meaty backbone of the Caucasian grill scene.
