Satsivi

Poached turkey or chicken cloaked in a thick, cool sauce of pounded walnuts, garlic, blue fenugreek, marigold, and white wine vinegar. Its name literally means "the cold one," and it is the centerpiece of Georgian New Year and Christmas tables — rich, creamy, deeply nutty, and always served at room temperature so the flavors can settle.
