Shkmeruli

A Racha mountain dish where a young chicken is roasted golden in a clay ketsi, then drowned in milk and a small mountain of pounded garlic and brought to a brief, fragrant boil right at the table. Born in the village of Shkmeri high in the Racha range, it is the simplest kind of revelation — three ingredients, deeply savoury, served with shotis puri to mop the bowl clean.
