Elarji
The pride of Megrelian cooking — coarse white cornmeal cooked down thick, then worked over the heat with generous handfuls of sulguni until the cheese melts through and the whole mass turns glossy and elastic. It's served scorching hot and eaten with the hands, every torn piece trailing a long rope of cheese, usually with bazhe or a dab of ajika alongside.
