Imeruli Khachapuri

The everyday khachapuri of Georgia — a flat, round disc of soft yeast dough enclosing a generous, salty filling of fresh imeruli cheese, baked until the crust is golden and the inside molten. Born in the western region of Imereti, it is the version most Georgians eat at home: simpler than its Adjarian cousin, but considered by many the truest expression of cheese-bread.
