A first-timer's guide to Georgian dishes

By OnlyFoods · Published May 28, 2026

Georgian cooking is generous, herb-heavy, and built for sharing. If it's your first time at the table, a few dishes show up almost everywhere — learn these four and you'll order with confidence. Tap any dish to read more and see the best-rated places.

Khinkali

Soup dumplings, twisted by hand and filled with spiced meat in a pool of broth. They're eaten with your fingers, broth-first — a small ritual worth getting right (we wrote a whole guide on it).

Khachapuri

Cheese-filled bread, and the dish most people fall for first. The Adjarian version is a boat of dough holding molten cheese, a runny egg, and a knob of butter you stir in at the table — rich, theatrical, and unforgettable.

Lobiani

Bread stuffed with seasoned mashed beans — humble, warming, and a staple of feast days. It's the comfort-food counterpoint to khachapuri's richness and a quiet favorite of regulars.

Mtsvadi

Georgian grilled skewers — chunks of meat cooked over grapevine embers and served with raw onion and tangy tkemali plum sauce. Smoky, simple, and the centerpiece of any outdoor gathering.
