The street food that conquered Tbilisi — wedges of meat (chicken or beef) shaved off a slowly turning vertical spit, tucked into a warm lavash with shredded cabbage, pickles, sliced tomato, and a generous slick of garlicky mayo or tahini-yogurt sauce.
